About this good practice
Steps to organic is a voluntary program for all professional kitchens in
Finland. The program helps to collect data about the development of
the use of organic products in professional kitchens and reinforces the
chain of organic food production and marketing. Program also offers
information on food procurement and knowledge on how to apply
sustainable development into kitchen functions.
Steps to organic is a reliable model for increasing the use of organic
ingredients in food services. Restaurant can get visibility for the
organization and be able to dependably communicate with customers
about using organic products. All restaurants that are joined the
program get visibility at the programs Web site. A restaurant can also
use programs star logo where are one to three stars.
There are six steps on the programme. At first step a restaurant is
using one significant foodstuff as organic and have 1-10 % organic. Second step use 3-20 % organic, third step 5-30 %, 4th step 30-60 %, 5th step 60-85 % and at sixth step conventional products are used only when organic alternative in not available. First star to logo a restaurant gets when step two is achieved.

Steps to Organic –program is accessible over the Internet. Organisations that are joined to program need to pay an annual subscription. The payment varies between 120 and 600 euros depending on how many meals are offered for year. New organizations will also pay a registry fee for 50 euros.
